San Francisco startup Lypid introduces PhytoFat: A vegan alternative to pork belly fat

San Francisco startup Lypid has developed a vegan alternative to pork belly fat called PhytoFat. The plant-based fat, made from plant-based oils and water, is designed to mimic the juiciness and flavour of animal fats in alternative meats. Unlike coconut oil, which melts easily, PhytoFat can withstand high cooking temperatures and remains within the product after cooking. It is created using microencapsulation technology, where tiny droplets of oil are surrounded by a coating. Lypid offers three varieties of PhytoFat with different melting points and textures that can be incorporated into various plant-based food products. The company has already partnered with Louisa Coffee, a major coffee chain in Taiwan, to serve plant-based burgers using PhytoFat and is now launching in the United States.
